Velouté of zucchini with fresh cheese and grilled bacon bits

The instructions

For: 4 people (1 Liter)
Preparation time : 10 minutes
Cooking time : 20 minutes

Step 1 : Wash the zucchini and remove the ends. Cut them into rings without removing the skin and peel the shallot.
Step 2 : Heat a tablespoon of oil in a pan.
Step 3 : Brown the minced shallot and the zucchini cut into small pieces over high heat.
Step 4 : Lower the heat.
Step 5 : Add the milk and 1/2 stock cube.
Step 6 : Pepper, do not salt .
Step 7 : Cover and simmer for fifteen minutes.
Step 8 : Meanwhile, grill the bacon in a pan and drain on absorbent paper.
Step 9 : When the courgettes are tender, remove from the heat and mix, adding the cream cheese.
Step 10 : Serve hot or cold, sprinkling the grilled bacon on top.

Advice

You can add spices (curry, cumin…) or fresh herbs (tarragon, parsley, mint…) as you wish.
